Firefly Farms creamery located in Accident, Maryland is an easy and relaxing drive into Maryland’s beautiful mountainous countryside in western Maryland.
In 1997 Mike Koch and Pablo Solanet bought a 130-acre farm in western Maryland. After raising goats and producing cheese, in 2006 the goats were sold and Firefly Farms focused on producing fine goat cheese.
The owners and staff feature sustainability in obtaining goat milk from four local family farms. In addition, the whey that is left over from the cheesemaking process goes to a farmer who uses it to feed his pigs.
Eventually an old unoccupied machine shop in Accident, Maryland was renovated and opened as a creamery and market for goat cheese. The design of the building was adapted to meet the needs of a creamery. The entrance to Firefly Farms creamery is unusual with two carved wood goat posts. Inside visitors can view steps of the cheese making process through two large windows.
The Firefly Farms Market
A market room in the creamery opened to the public in October 2011. Visitors can stop to taste a sample and purchase goat cheese. In addition to the Firefly Farms goat cheese available, visitors can buy cheeses sourced from other states boutique creameries.
Other gourmet items in Firefly Farms market include a selection of carefully chosen wines. The wines are sourced from boutique wineries. Numerous gourmet products are available to browse and purchase including olive oil potato chips.
Firefly Farms Cheese Artisan Selections
- Allegheny Chevre is fresh, unripened cheese made with goat’s milk. Suggested uses include crumbled on salad and use in pasta dishes. Allegheny Chevre is the best selling cheese for Firefly Farms.
- Bella Vita is an Italian-style cheese that is good alone or for cooking.
- Black & Blue has a black wax rind. The cheese is aged for three to four months. Black & Blue can be used on a cheese board or in cooking.
- Buche Noir (black log) is a chevre log that has been aged. The logs are coated with a vegetable ash and aged.
- Cabra La Mancha (goat from La Mancha) can be used alone or with crackers. The cheese melts and therefore is a good cheese for use in cooking.
- Meadow Chevre is a spreadable chèvre. This cheese is not aged. Two flavors are available. One kind has crystallized ginger, almonds and honey. The other type is flavored with sundried tomatoes, roasted garlic and herbs. Suggested uses include using the sweet type by spreading on brioche or a croissant. The second type can be mixed into pasta.
- Merry Goat Round is reminiscent of Brie. Merry Goat Round has won several awards on the national and international level.
- Mountain Top Bleu, a bleu and white mold cheese, grows softer as it ripens. This cheese is good alone or when cooking.
